Raw Baba Ghanoush

(NOTE: I made this, and thought it was *so-so*. I thought it lacked something and the eggplant was too bitter -
I think that is why they typically make it out of roasted eggplant and not raw. If I had it to do over again,
I would let the eggplant cure ahead of time - cubed - in salt. I hear that removes some of the bitterness.
Just sprinkle the salt on the eggplant and let it sit a a bowel for a few hours. The eggplant will begin to "sweat").
When you are ready to make the dish, rinse the eggplant, then...

Blend in processor:
1 eggplant (skinned and chopped)
1/2c sesame seeds (grind in a coffee grinder or small food processor)
1T olive oil
1t salt
1 lemon juiced and strained
2 cloves garlic
Chile powder to taste
cumin powder to taste
Ume vinegar to taste (I would not recommend any other type of vinegar - if you don't have it, leave it out. Can be purchased at most health food stores).
We ate ours with crudites. We used snap peas, carrots, and celery, but you can use whatever you like. Originally I had
wanted SNOW peas, as opposed to snap, but we couldn't find organic ones, so we went with the snap peas instead...
